Crafts I did for Liam's Birthday

As I mentioned many posts back, I made some crafts for Liam's First Birthday. This picture shows all the crafts I did, including flag banners, birthday banner, photo banner and a cupcake stand. I mostly got these from good old Pinterest, of course. I also ended up making his invites. I will give a simple run down and include some links for you!

Flag Banners (including the happy birthday):
For these, I followed this blog.
Basically do any kind of string or ribbon you want to use (I ended up using twine). Then make flags the way you want and size you want. From there, either glue them or what I did is hole punch them and ran the twine through. It was really easy, but time consuming. To add Happy Birthday or anything of the like, just print or cut out letters and simply glue them on. I even put an accent color being to make them pop.

For the Cupcake Stand:

Gather together sizes of cans (I used tuna for the base, a condensed soup can for the top, big progresso soup for the bottom, and a normal can such as fruit cocktail for the middle. You also need cardboard or foam boards (the Dollar Tree has big square sheets of foam boards) and I just doubled them up. I used plain old scissors to cut circles (I traced around pizza pans and such to get my sizes). You could also use an x-acto knife too. It is ok if the edges are messy because you will need some kind of paper or ribbon to cover up the sides. I wanted my stand basic, but you could even tape/glue down some paper to the boards. Then just hot glue the cans to the boards (they will come right off) and glue the ribbon a little at a time and you're done!

For the photo banner:
I found that idea on Pinterest too, but you don't need a tutorial. Basically use ribbon or twine (I used ribbon this time since it held better for me). Then print out the pictures you want (I used my son's first 11 months for his first birthday), tape or glue them on some paper for a nice background and then paper clip or use clothes pins. I love this idea because you can use the pictures later and just using clothes pins or clips wont ruin the pictures.

For his Invites:
I wont even explain this because it took so much time! I used a combo of different invites I found and put them all together. In a short version, I used LOTS of cardstock, pained some polka dots because I couldn't find scrapbook paper I liked with them and then did multiple layers and I ended up sealing it all with modge podge (which is AMAZING glue). That took too long though, so I just did self-laminating..super easy. Oh and for the writing, photoshop was my friend.

Party favors: 
I think this was the easiest thing ever. Liam of course used to eat baby food, so I saved all the jars, washed them out good and filled them with goodies. Over the course of a few months I found great deals on fabric and candy so I filled them up with m&ms or skittles. I them put the lids on and covered them with fabric, securing with ribbon. You could use any kind of favor or even the 3rd stage of the jars, which are a bit bigger. There are TONS of uses for baby food jars and they aren't that expensive.

A lot of stuff you can find at the dollar store or for super cheap. I paid a lot less for all of that stuff than if I were to go buy the decor. I love being crafty though, good luck!

Peanut Butter, Apples and Granola; Thank You Pintrest



This is an apple, with granola and peanut butter. I absolutely love it and can't wait to go buy more apples. You need to try this NOW. You can always substitute the peanut butter for honey or nutella! This is so easy, it doesn't really need a recipe. I used a big bag of granola we had from the store, but you can also make your own. BY THE WAY, if you haven't heard of Eat Yourself Skinny, you should check it out. She has wonderful recipes that are great for you and very healthy. 


Here are your ingredients: 
1 cup Cinnamon Granola (recipe below) 
1/4 cup natural-style peanut butter (nutella, or honey alone works too) 
1 Tbsp. honey 
2 red or green apples, cored and cut into rings  

Cinnamon Granola: 
1/4 cup brown sugar 
1 Tbsp water 
2 tsp. canola oil 
1/2 tsp. ground cinnamon 
1 cup uncooked old-fashioned rolled oats 
1/2 cup chopped pecans (optional) Cooking spray  

To make the granola: 
Preheat oven to 300 degrees F.  Combine brown sugar and 1 Tbsp water in a medium microwave-safe bowl.  Microwave at HIGH 30 seconds or until sugar is dissolved.  Stir in oil and cinnamon.  Add oats and pecans, stirring until coated.  Spread oat mixture on a large rimmed baking sheet coated with cooking spray. Bake at 300 degrees F for 30 minutes or until browned, stirring twice.  Spread mixture in a single layer on wax paper to cool completely.  Store in an airtight container.   

For apple rings: 
Place 1 cup of the granola mixture in a small dish.  Combine peanut butter and honey in a small bowl, stirring until smooth.  Spread mixture evenly on 1 side of each apple slice.  Sprinkle evenly with granola.  Enjoy!

Cupcake Recipes


 I said I would include recipes from Liam's birthday. I previously did test runs of all the cupcakes and I found that I loved the recipes. I will also include the whip cream frosting I put on the cupcakes. I would have to say that the lemon was by far my favorite!


Chocolate Cupcake 
 (also used for Liam's cake)
Yields 16-20 cupcakes
Ingredients:
  • 2 cups flour
  • 2 cups sugar
  • 1 teaspoon baking powder
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 cup unsweetened cocoa
  • 1 cup oil
  • 2 cups hot water
  • 2 eggs
  • 2 teaspoons vanilla

Directions:

  • Set oven to 350 degrees
  • Make sure eggs are room temperature. 
  • Sift all dry ingredients in a bowl and set aside. 
  • In main bowl, mix wet ingredients. 
  • Slowly combine the two and mix until blended together. 
  • Pour the batter in muffin tins. 
  • Bake them at 350 degrees until a toothpick inserted in the center comes out clean (18 minutes). 
  • Let cool in tins for a few minutes and then transfer to cooling rack.




Vanilla Cupcake
Yields 12-16 cupcakes
Ingredients:
  • 1 1/4 cups cake flour
  • 1 1/4 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 eggs
  • 3/4 cup sugar
  • 1 1/2 teaspoons pure vanilla extract
  • 1/2 cup oil (vegetable, canola or extra light olive oil)
  • 1/2 cup buttermilk

Directions:

  • Preheat oven to 350*F.
  • In a medium bowl, add cake flour, baking powder, baking soda and salt.  Stir together with whisk, and set aside.
  • In the bowl of an electric mixer, add eggs and beat 10-20 seconds.  Add sugar and continue to beat on medium speed about 30 seconds.  Add vanilla and oil, beat.
  • Reduce mixer speed to low and slowly add about half of the flour mixture.  Add half of the milk, then the rest of the flour and the rest of the milk.  Beat until just combined.  Scrap down the side of the bowl.
  • The batter will be thin.   Pour batter into a muffin pan prepared with paper liners.  Fill liners about 2/3 full.
  • Bake cupcakes in pre-heated oven for 12-14 minutes.
  • Cool in pan 1-2 minutes, then remove cupcakes from pan (carefully) and finish cooling on a wire rack.


Lemon Cupcake
Yields 12-16 cupcakes
Ingredients:
  • 2 1/4 cups cake flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 1/4 cups buttermilk
  • 4 large egg whites
  • 1 1/2 cups sugar
  • lemon zest from two lemons (this MAKES the cupcakes)
  • 1 stick (8 tablespoons) unsalted butter, at room temperature
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon pure lemon extract

Directions:

  • Center a rack in the oven to 350 degrees F. Prepare cupcake tins by using liners or spray with non-stick cooking spray
  •  Sift together the flour, baking powder and salt.
  • Whisk together the milk and egg whites in a medium bowl.
  • Put the sugar and lemon zest in a mixer bowl or another large bowl and rub them together with your fingers until the sugar is moist and fragrant. Add the butter and, working with the paddle or whisk attachment, or with a hand mixer, beat at medium speed for a full 3 minutes, until the butter and sugar are very light.
  • Beat in the extracts, then add one third of the flour mixture, still beating on medium speed. Beat in half of the milk-egg mixture, then beat in half of the remaining dry ingredients until incorporated.
  • Add the rest of the milk and eggs, beating until the batter is homogeneous, then add the last of the dry ingredients.
  • Finally, give the batter a good 2-minute beating to ensure that it is thoroughly mixed and well aerated. Place the batter into the cupcake tins.
  • Bake for 18 minutes, or until a toothpick comes out clean when inserted into the cupcakes. Cool on wire rack.
     
    Whip Cream Frosting
    (I made one batch per batch of cupcakes) 

Ingredients:
  • 1 (8 ounce) package cream cheese (any), softened at room temperature
  • 1/2 cup white sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 2 cups heavy cream

    **NOTE** For chocolate, add unsweetened cocoa by the table spoon until you reach the amount you need. I think I used 4-6 tablespoons but I didn't measure so that could be off. For lemon, just replace almond extract with lemon; could also add some lemon zest or a tad bit more lemon extract. Play around with it!

Directions:

  • Combine the cream cheese, sugar, vanilla extract and almond extract in a large mixing bowl or the bowl of a stand mixer (I used our blender)
  • Miix on medium speed until smooth. 
  • While the mixture is still whipping, slowly pour in the heavy cream. 
  • Stop and scrape the bottom of the bowl a couple of times while you continue whipping until the cream can hold a stiff peak. 
  • Do NOT over mix (it will turn into a butter state)

Liam's First Birthday

Well, Liam's birthday isn't until Tuesday, but we had his party this past Saturday. I was bummed all week though, because the forecast called for rain. Sure enough that morning it was nothing but rain. It let up enough for us to load stuff into cars and head down there. I will tell you though that I was the most upset person ever that morning. I had a serious breakdown because nothing was going right and I just wanted the day perfect. Mainly it was because I worked so hard on everything there. The decor was all handmade. I will give instructions on that later. I also made the party favors, the cake stand and cupcakes. Don't worry, I plan to make a post about the recipes for the cupcakes as well. The flavors we chose were chocolate (which is what his cake is as well), vanilla and lemon. The frosting is whip cream frosting, which is basically heavy cream, cream cheese and sugar. Again, more on that later. Anyway, Liam likes to run around and not stay still so I thought the park would have been perfect, with the toys and grass area. However, we got there and things started looking up. Luckily Liam fell

(it's only a couple minutes away) and stayed asleep for a short nap. I got everything set up, while the husband cooked the hot dogs and Liam sat in his highchair with snacks. Everyone showed up about 11:30am and we just mingled for a bit. Then we all got food, which it was all delicious. The last couple people showed up and we decided to let Liam dig into his cake just in case anyone had to leave. However, he wasn't a big fan. I'm not sure if it was too cold and mushy, or just because he was full. Either way, he was NOT having it. It might have been all the people there singing happy birthday (a good 30 people or so). I still managed a few great shots though. After we calmed him down with a bottle, all was well. He surprisingly opened presents pretty well. You know how kids are though; he got distracted. We got done with everything at about 1:30pm (which is what I aimed for) and we cleaned up. It was surprisingly a lot of fun and Liam seemed to enjoy himself. He even chased some ducks that showed up and played in puddles. He was a champ and I am just glad he had fun. I am so thankful for everyone who showed up, even if the weather didn't work out the way I wanted.

I can't believe my baby will be one tomorrow; my how time flies!

My son's birthday party is tomorrow (actual birthday on Tuesday). Therefore I will be super busy. BUT expect a few posts to recap tomorrow within the next few days. Sausage and Cauliflower Rice


So I know I have been super busy and haven't been posting lately, but I wanted to share my dinner. We had cauliflower rice with turkey sausage and veggies. Cauliflower rice is simply a head of cauliflower chopped up to make the consistency of rice. You can use a blender, but we used our magic bullet. Add some spices and some meat, then it wont taste so much like a vegetable. I didn't really use a recipe though. This is what I did though:


 Makes 2 Servings
  • 1 head of cauliflower
  • 1 zucchini
  • 1 squash
  • 1/2 onion
  • 2 peppers (I used 1 orange, 1 yellow)
  • 1 package of sausage (I used turkey but you can use any meat)





Break off the cauliflower and add it to the blender. Chop it up until it looks like the consistency of rice and set aside. Then saute the onions and veggies in a little of olive oil. Add some seasoning and then warm up the sausage (unless whatever meat you use needs to be cooked). From here you can either cook the rice in a pan or you can warm it in the microwave (that is what I did). Serve the meat and vegetable mixture over the 'rice' and you have a fantastic, healthy meal. Feel free to substitute the meat and vegetables for anything else you like.

The Unexpected Within Motherhood





This week's Toddle Along Tuesday post is about what is unexpected with pregnancy or having a child. Feel free to link up!

I expected a lot with having a child. I expected no sleep, his needs before mine, no alone time, not being able to hang out with friends and all this other nonsense. Let me tell you now, I HATE how people perceive having children. Sure, I didn't get as much sleep as normal, but I still got plenty. My husband and I took turns helping through the night when he was a newborn. When my husband went back to work, I woke up during the night to help with Liam. However, once he was home for the night, he took Liam. Even after working all day, he still came home to help. I get plenty of sleep now, I still get alone time if I ever want it (my husband will gladly watch him), I can hang with friends with or without Liam; it's just all nonsense. Everyone makes you think having a child is so hard. I actually think it is easy in the most part. Ok, easy isn't the right word, but hopefully you understand what I mean. I am so blessed to have this little man in my life and I don't think it was hard with him at all, even as a newborn. Sometimes it's hard, sometimes I don't know what to do for him or what he wants. Sometimes he cries for no reason and just wants his mom and dad. Sometimes he is sick and just cries. It's not all easy, but it's also nowhere near what people think it's like.
One other unexpected part of having Liam is the fact that I lost a lot of friends. I realized that I knew things wouldn't be the same, but I didn't think everyone would leave me or be stupid. I always have to meet people somewhere just because I have Liam. You know how quick I could snap his car seat in their car?! Why waste gas for both cars when we could take one? Plus, Liam is well behaved. He is never acting out in public, he never cries in public unless he's hungry/thirsty. People give you that look, like 'oh no, here comes a mother and her child. I need to sit far away as possible.' Not all children act out or scream. Even if they do, most are babies, it's going to happen. It's not like they just tell you in words what they want. I just wish people would think twice about me and my life. I can still go have fun with Liam around. My friends love him; the ones who stuck around. Others are too busy I guess to hang out with me. I don't always have to have Liam around, but they don't seem to realize that.Oh well, I guess that's the price I pay for growing up and having my own life with my husband and Liam. Maybe some of my other friends need to grow up and realize that life isn't only about partying. I wouldn't change my life for the world.

Cupcake Testing

I have been so busy lately, trying to figure out details on Liam's party. I decided instead of store bought cupcakes, I am making my own. Same goes with Liam's cake. I made test runs these past couple days to make sure the recipes are good ones. I have decided on chocolate with chocolate buttercream, lemon with lemon cream cheese (my absolute favorite) and vanilla with vanilla buttercream (might change that to vanilla cream cheese but we'll see). I will probably do the chocolate version with Liam's cake. I am excited though. I'll be nice enough to share recipes as well, definitely do the lemon! I could eat a million of those. I practiced my icing too; I had to get a bigger tip because the smaller one used on the lemon and chocolate wasn't cutting it.

Lemon w/ lemon cream cheese
Here is the Lemon Cupcake Recipe (includes the cream cheese recipe). I am definitely keeping this. I have never had such a delicious cupcake. The lemon zest definitely makes the cake. This picture is my first batch, don't judge. It was a little too thick and I didn't fill the cupcake pan full enough so they came out like muffins lol. They were still good though. The second batch was perfect, except I didn't take a picture. The only difference is that I added maybe a tablespoon or so of milk. I'm sure I didn't have to, but to me the batter was too thick.

Chocolate w/ chocolate buttercream
Here is the Chocolate Cupcake Recipe. Fair warning, this cake is RICH. It is so chocolatey, but it's amazing. Especially if you love chocolate. These came out first try, since I used liners and filled it well. Don't judge me haha. Anyway, I used a buttercream recipe found here and all I did was add a few tablespoons of unsweetened cocoa. I used this time to taste test it ;). I am not a fan of buttercream frosting. It is too sweet to me and tastes like pure sugar (it's like the kind you find in stores on their cupcakes and cakes). Anyway, despite that fact, I really liked this. I substituted butter for shortening though, since I read it keeps better with heat (since Liam's party is outside).

Vanilla w/vanilla buttercream
Here is the Vanilla Cupcake Recipe. As you can see, the icing is much better. I used one of the larger tips. I am not the biggest fan of vanilla cake. I would rather have chocolate or some other flavor. However, these were actually pretty good if I do say so myself. I didn't really like the buttercream and I think to others it would be so-so (chocolate was better). I may change it to vanilla cream cheese, but I am not sure yet. We will just have to see. Either way, this is still good! I tried another recipe and failed. It was doughy and dense. It was quite horrible. I think all of these recipes are keepers!

Steals and Deals: Best Haul Yet

I am definitely excited because I believe this is my best haul yet! Albertsons had their doubler event again with their TTV (twice the value) coupons. Usually they come out in the Sunday paper whenever they have them, but the state of Washington had liquor pass to where it is now sold in regular stores (rather than liquor stores). That just started that yesterday so they did a special thing where they made it so the TTV days are 5 days from June 1st-5th, instead of the normal 3 days. I would rather not bore you with my complaining about it right now. All I think is that people are stupid because they act like they've never seen alcohol before lol.

Anyway, I will show you everything. However, the dial soap is from Walgreens, not Albertsons. It was on the way so I picked it up at the same time. I hope this way works for all of you because it is more time consuming, but hopefully it shows the way I worked out my transactions.

If you shop at Albertsons and do their TTV events, you would know that you can only double 3 coupons per doubler sheet and you can only have 3 sheets per trip. I ended up doing one set, going to my car to put those away, going back, then to my car and back one last time. It took me a total of 9 transactions. You could probably either go to the back of the line (if there is one - I went at 8am) or do what I did.
